1,2,3, Easy Peezzy Paleo Muffins!

Calling all my Paleo, Gluten-Free Friends, Mothers, and or folks looking for the simplest muffin recipe, keep reading...
Recently my family has been living in a tiny little space for a temporary landing zone. During this time I have had to figure out how to prepare meals using a toaster (convection oven), electric kettle, and a electric burner. Let's say that I have a new appreciation for Tiny Home living, and now consider myself a member of the tribe. Although it is temporary, I could see myself really living my life via. mobile home on wheels. Live with less, make do with only what you need. Truly a cleansing experience.
You may be asking what does this have to do with MUFFINS...! Everything! Because while I am an avid cook, someone who prepares every meal from scratch I had to rethink how to prepare so many meals. Partially because my counter space is next to nothing, and it seemed like a daunting task to figure out where I would place ingredients, but also because when I would begin to cook I would have to remind myself that my oven is a Toaster!
Now living in Brooklyn apartments for many years has helped me to live small, so I am quit pleased with how well I have managed to continue to be creative in the kitchen.
So back to the muffins....FINALLY!
I have two words for you BIRCH BENDERS, Paleo pancake & waffle mix~ Holy god, thank you for small miracle for a gal in a small little kitchen!

Whilst I love to prepare pancakes from scratch and simple ingredients, sometimes you need pre-packaged foods to help you get through life. As long as the ingredients are quality, and it is a brand you can trust then I say Why Not!
While walking through target I found this brand and decided that I will give it a go. I was pleasantly surprised at how much my daughter and I loved it. All I had to do was add water. Anyone can JUST ADD WATER! Brilliant! The ingredients are great, and it's Paleo.
While sitting on the couch one evening contemplating who knows what it suddenly dawned on me that I can probably use this pancake mix to create muffins, and probably other baked items, because it has so many of the ingredient you need to bake with already mixed in.
So I got up and made a few different types of muffins, almond butter, blueberry, and a simple maple muffins with chocolate chips. Those were simple and easy, and a true crowd pleaser.
But best of all are the Banana, Maple, Raisin and Granola Muffins I threw together!

Here is how I created these little gems.
Method:
Pre - heat oven to 350 degrees
You will need, a small mixing bowl, a fork, 1 ripe banana, grain-free granola, 3 tbs maple syrup, 1/4 cup raisins, 3/4 cup water, 1 cup pancake mix, 12 cupcake/muffin cups.
*Here is a tip if you are feeling really lazy and or don't even have many kitchen tools, just eye ball how many raisins, and use a spoon for the maple syrup, no need to be technical here.

Step 1: Mash the Banana

Step 2: Add pancake mix, and water and mix until well combined.

Step 3: Add the Maple Syrup

Step 4: Add the raisins & mix both maple syrup until well combined.

Step 5: Pour into muffin tins ( I use silicone reusable muffin cups )

Step 6: Add Granola and then place in the oven at 350 degrees for 18 - 20 minutes.

I made 12 muffins total with this amount of mix. Perfect amount to enjoy with your family, friends, perfect for a play date with toddlers, and big kids as well!
When you take them out of the oven let them cool, or you can do as I like and eat one immediately.
They should look like this when they are done.

When you break them open they are light and fluffy, perfectly delicious! If you look you can see my daughter Phoenix's little hand stealing a muffin while I photographed these beauties.
